February 3, 2024 @ 9:00 am - 11:30 am AWST
Fermentation is not only great for improving gut health and preserving excess garden produce, it allows you to explore the world through traditional recipes and unlock a world of new flavour too! In this hands-on workshop your instructor Tim will share the process of Lacto-fermentation and how to do it step by step at home. In this 2.5hr workshop Tim will cover:
- Overview of the Lacto-fermentation process
- How to ferment safely and what to watch out for
- Basic equipment to acquire
- Hands-on making of:
- German Sauerkraut
- Korean Kimchi
- Salvadorean Curtido
- Suggestions and inspiration for other delicious ferments to try at home
- Tastings of the above and other fermented products
Leave with a jar of Sauerkraut, Kimchi, or Curtido and the recipes, knowledge and confidence to make much more at home.
Most equipment and materials are provided, but please bring a few wide-mouth clean glass jars for your products.
